10:00 a.m.- 11:00 a.m. Carolyn Niethammer - Contemporary Southwest Cooking Niethammer writes about the Southwest: the plants, the food, the mountains, canyons and streams, and the people. Her most recent cookbooks are "The Prickly Pear Cookbook," which shares recipes from professional chefs, and "The New Southwest Cookbook," with recipes from top restaurant and resort chefs.

11:30 am-12:30 pm Marcela Valladolid - Fresh Mexico: Contemporary Cooking from South of the Border 100 Simple Recipes for True Mexican Flavor Between taping episodes of her cooking show, "Relatos con Sabor," for Discovery en Español in the United States and Latin America, Valladolid runs her own catering company and teaches culinary arts to private groups in Tijuana and San Diego. She was a contestant on "The Apprentice: Martha Stewart."

1:00 p.m. -2:00 p.m. Scott Uehlein - Healthy Cooking the Canyon Ranch Way Uehlein, corporate chef for Canyon Ranch, is the author of "Canyon Ranch: Nourish: Indulgently Healthy Cuisine" and co-author of "Canyon Ranch Cooks." He received his culinary training at the Culinary Institute of America and studied with famed chef Madeleine Kamman in the Napa Valley.

2:30 p.m.-3:30 p.m. Janos Wilder - Great Chiles Rellenos Janos Wilder demonstrates the preparation of a favoriteMexican dish. Wilder, a noted chef, wrote "Janos: Recipes and Tales from a Southwest Restaurant" and owns Janos Restaurant and the adjacent J Bar at the Westin La Paloma in Tucson's Catalina Foothills. His latest is "The Great Chiles Rellenos Book."

10:00 am-11:00 Andrew Smith - Eating History:Thirty Turning Points in the Making of American Cuisine Smith, author of "Thirty Turning Points in the Making of American Cuisine," is a writer and lecturer on food and culinary history, and a consultant for TV productions. He teaches culinary history at the New School in Manhattan and is editor-in-chief of The Oxford Encyclopedia of Food and Drink in America.

11:30 a.m.- 12:30 p.m. Gary Nabhan & Maribel Alvarez - Exploring Foodways of the Transborder Southwest Nabhan is author or editor of 20 books and a frequent contributor to many journals and magazines, including the Journal of the Southwest, Nature, Orion, Natural History, Audubon and Sierra. He is a research social scientist based at the Southwest Center of the University of Arizona.

Alvarez, through her work at the UA's Southwest Center, is the animator of BorderLore, a cultural documentation initiative to record and interpret vernacular knowledge in the borderlands. She serves on the Board of the National Association of Latino Arts and Culture and edits its national magazine, El Aviso.

1:00 p.m. -2:00 p.m. Deborah Madison - The Glorious Highs and Oh-So Lows of Eating Alone Madison is the author of several books on cooking, including "What We Eat When We Eat Alone," "Vegetarian Cooking for Everyone" and "Local Flavors: Cooking and Eating from America's Farmers' Markets."

2:30 p.m.-3:30 p.m. Jeff Hertzberg &Panel Zoe Francois - Healthy Bread in Five Minutes a Day Hertzberg has been a physician, university professor, information technology consultant and ardent amateur baker. He is the co-author of "Healthy Bread in Five Minutes a Day."

Francois is a pastry chef and baker trained at the Culinary Institute of America. In addition to teaching baking and pastry courses nationally, she consults in the food industry.

4:00 p.m.-5:00 p.m. Meredith Dreiss & Sharon Edgar Greenhill - Chocolate: Pathway to the Gods Dreiss is an archaeologist and producer of the documentary film, “Chocolate: Pathway to the Gods.” She is president of the Cynthia and George Mitchell Foundation, which focuses on global sustainability issues, and ArcheoProductions Inc.

Greenhill has more than 25 years of professional experience in architecture, museum design and historic preservation. She is the author of "Historic Austin," and co-producer of the documentary film, “Chocolate: Pathway to the Gods.”
